I think it's about funding the sport. Fairfield left when the MAAC wasn't requiring full funding of lacrosse. The MAAC only started making it a fully funded sport in 2012 or so. By then, Fairfield was already out and its status grandfathered.
In a similar vein, PC volleyball had stopped (or may never have been) being a fully funded sport which is why it left the Big East and returned when it was fully funded. gosports1 can probably tell more about the history there.
